Can I put cheese leftovers in the disposer?

Cold water, a little at a time, mixed loads.Food scraps only. Never fats or oils, never anything that isn't food.

How it behaves in the disposer

Cheese brings fat along, and fat stays liquid only while it is warm. One grinding stage is enough, and nothing is left behind in the trap. Soft and fresh cheeses are fine with every model. Rinds have their own page, because it depends on what they are made of. With that one precaution it becomes an ordinary scrap. It changes little in what you do, and a lot in what is left in the bin.
